Crunchy spiced chickpeas roasted to golden perfection with warming spices

# What You Need:

→ Seasoning & Coating

02 - 1.5 tablespoons olive oil
03 - 1 teaspoon smoked paprika
04 - 0.5 teaspoon ground cumin
05 - 0.5 teaspoon garlic powder
06 - 0.25 teaspoon ground cayenne pepper
07 - 0.75 teaspoon fine sea salt
08 - 0.25 teaspoon black pepper

# Directions:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Pat the chickpeas dry thoroughly with paper towels, removing as much moisture as possible to achieve maximum crispiness.
03 - Spread chickpeas on the prepared baking sheet in a single layer.
04 - Roast for 20 minutes, shaking the pan halfway through.
05 - Remove from oven, drizzle with olive oil, and sprinkle with smoked paprika, cumin, garlic powder, cayenne pepper, salt, and black pepper. Toss to coat evenly.
06 - Return to oven and roast for 12 to 15 minutes, shaking once, until golden and crisp.
07 - Let cool for 10 minutes. The chickpeas will continue to crisp as they cool. Enjoy warm or store in an airtight container at room temperature for up to 3 days.

# Expert Suggestions:

01 -
  • They're ridiculously addictive: once you start eating them, stopping feels almost impossible because the crunch is so satisfying.
  • Protein-packed without guilt: a whole can of chickpeas becomes a guilt-free snack that keeps you full between meals.
  • Customizable to your mood: swap the spices based on what your kitchen has or what flavors you're craving that day.
02 -
  • Moisture is your enemy: I learned this the hard way after pulling out a batch that was disappointingly chewy because I skipped proper drying—those paper towels aren't optional.
  • The second roast is shorter on purpose: Once they've had their first roast, they need less time; adding spiced oil actually helps them crisp faster, so don't leave them in as long as the first round.
03 -
  • If you're feeling patient, peel the chickpeas before roasting: it's tedious, but the extra surface area exposed means even more crispiness and faster roasting.
  • Use convection if your oven has it: the circulating air creates more even browning and helps them crisp faster than conventional heat.
